Green Chile Whipped Goat Cheese

Ingredients

  • 8 ounces goat cheese
  • 2 tablespoons half & half or other liquid
  • 3 tablespoons extra virgin olive oil
  • 1 unit serrano chile, stemmed, seeded, minced
  • 2 medium cloves garlic, smashed, minced
  • 1 ½ teaspoons toasted sesame seeds
  • pinch unit salt, or to taste

Instructions

  1. In a medium bowl, whisk together the goat cheese and half & half until light and spreadable.
  2. In a small saucepan over medium heat, combine the olive oil, minced chile, and minced garlic. Cook for about five minutes, allowing the garlic to lightly color.
  3. Transfer most of the solids from the oil to the goat cheese mixture and stir in. Season with salt to taste.
  4. Let the chile oil cool slightly, then transfer the goat cheese to a serving bowl.
  5. Drizzle the remaining oil over the goat cheese, adding the remaining garlic and chile solids on top. Sprinkle with sesame seeds.
