Lemon Feta Dip with Garlic Tomato Vinaigrette

Ingredients

The vinaigrette

  • cup extra virgin olive oil
  • cups small cherry tomatoes
  • 3 cloves garlic
  • 1 teaspoon crushed red pepper flakes
  • 1 piece lemon rind
  • 1 tablespoon fresh oregano leaves
  • a pinch flaky sea salt
  • a pinch black pepper

The dip

  • 8 ounces feta cheese
  • 1 tablespoon fresh dill
  • 1 tablespoon fresh chives
  • to taste fresh arugula
  • to serve toast, bread or pita

Instructions

  1. 1. Heat olive oil in a skillet over medium heat.
  2. 2. Add cherry tomatoes, garlic, crushed red pepper flakes, oregano, lemon rind, and a pinch of salt and pepper.
  3. 3. Cook until tomatoes begin to burst and garlic is fragrant, about 10-15 minutes.
  4. 4. Remove from heat and let cool slightly.
  5. 5. Crumble feta into a serving bowl.
  6. 6. Drizzle the warm tomato mixture over the feta.
  7. 7. Top with fresh dill, chives, and arugula.
  8. 8. Serve with bread or pita.
