Ingredients

The French Toast

  • 1 loaf day old french bread
  • 12 oz Neufchatel cheese
  • ¼ cup powdered sugar
  • tsp vanilla
  • 2 cups fresh or frozen blueberries
  • 1 lemon zest
  • 10 large eggs
  • 2 cups milk
  • 5 Tbsp granulated sugar

The Blueberry Syrup

  • ¾ cup granulated sugar
  • Tbsp cornstarch
  • ¾ cup cold water
  • Tbsp fresh lemon juice
  • cups fresh or frozen blueberries

Instructions

  1. Cut off the ends of the bread and discard them, then cut the loaf into cubes.
  2. Spread half of the bread cubes in a buttered baking dish.
  3. Blend together Neufchatel cheese, powdered sugar, and ½ tsp vanilla.
  4. Mix lemon zest with 1 Tbsp sugar and spread the cheese mixture over the bread cubes.
  5. Sprinkle blueberries and lemon zest mixture over the cheese layer, then add the remaining bread cubes.
  6. Blend eggs, milk, remaining sugar, and vanilla, then pour over the bread cubes.
  7. Cover and refrigerate for 8 hours or overnight.
  8. Allow the dish to rest at room temperature for 30 minutes before baking.
  9. Preheat the oven and bake covered for 30 minutes, then uncovered for an additional 25-35 minutes until golden.
  10. Let it rest for 5 minutes before serving with blueberry syrup.
