Overnight Blueberry French Toast

The Blueberry Syrup

fresh or frozen blueberries
Instructions
- Cut off the ends of the bread and discard them, then cut the loaf into cubes.
- Spread half of the bread cubes in a buttered baking dish.
- Blend together Neufchatel cheese, powdered sugar, and ½ tsp vanilla.
- Mix lemon zest with 1 Tbsp sugar and spread the cheese mixture over the bread cubes.
- Sprinkle blueberries and lemon zest mixture over the cheese layer, then add the remaining bread cubes.
- Blend eggs, milk, remaining sugar, and vanilla, then pour over the bread cubes.
- Cover and refrigerate for 8 hours or overnight.
- Allow the dish to rest at room temperature for 30 minutes before baking.
- Preheat the oven and bake covered for 30 minutes, then uncovered for an additional 25-35 minutes until golden.
- Let it rest for 5 minutes before serving with blueberry syrup.
