Ingredients

Pizza Dough

  • 3 ½ cup all-purpose flour
  • 1 ¼ cup water
  • 1 ¾ teaspoon active dry yeast
  • 1 ¼ teaspoon sugar
  • 1 ¾ teaspoon sea salt
  • 1 tablespoon olive oil

Pizza Topping

  • ½ cup apple butter
  • ½ cup tomato paste
  • ½ tart apple sliced thin
  • ½ cup gorgonzola cheese
  • ½ cup baby arugula leaves
  • 2 tablespoon toasted pine nuts

Instructions

  1. Prepare the pizza dough by mixing warm water, yeast, and sugar, and letting it sit until creamy.
  2. Combine flour and sea salt in another bowl, then add to the yeast mixture and mix until a coarse ball forms.
  3. Let the dough rest covered for 5 minutes, then mix again until the desired consistency is achieved.
  4. Coat a bowl with olive oil, place the dough inside, and let it rise until doubled in size, about 40 minutes.
  5. Divide the dough into two balls and let them rise again until doubled, about 2 hours.
  6. Shape the dough into a 12-14 inch pizza and prepare your oven or grill.
  7. Mix apple butter and tomato paste to create the pizza sauce.
  8. Spread the sauce on the dough and top with sliced apples and half of the gorgonzola cheese.
  9. Bake the pizza until the crust is browned, about 5-6 minutes on a grill or 10-14 minutes in an oven.
  10. Remove from the oven and top with arugula, remaining gorgonzola, and toasted pine nuts before serving.
