Apple Butter Pizza

Instructions
- Prepare the pizza dough by mixing warm water, yeast, and sugar, and letting it sit until creamy.
- Combine flour and sea salt in another bowl, then add to the yeast mixture and mix until a coarse ball forms.
- Let the dough rest covered for 5 minutes, then mix again until the desired consistency is achieved.
- Coat a bowl with olive oil, place the dough inside, and let it rise until doubled in size, about 40 minutes.
- Divide the dough into two balls and let them rise again until doubled, about 2 hours.
- Shape the dough into a 12-14 inch pizza and prepare your oven or grill.
- Mix apple butter and tomato paste to create the pizza sauce.
- Spread the sauce on the dough and top with sliced apples and half of the gorgonzola cheese.
- Bake the pizza until the crust is browned, about 5-6 minutes on a grill or 10-14 minutes in an oven.
- Remove from the oven and top with arugula, remaining gorgonzola, and toasted pine nuts before serving.
