Instructions
- Preheat the oven to 350°F and prepare a pizza pan.
- Whisk together the flour, baking powder, baking soda, and salt in a bowl.
- Cream the sugar and butter in a mixer until combined, then add the egg and vanilla.
- Mix in the dry ingredients until just combined.
- Spread the batter onto the prepared pizza pan and bake for 11 to 13 minutes.
- Let the crust cool completely on a wire rack.
- Whip the cream cheese, sugar, and vanilla until light and fluffy.
- Spread the cream cheese mixture over the cooled crust.
- Top with fresh fruit as desired.
- Whisk together the apricot preserves and water, then brush over the fruit.
