Ingredients

The cookie base

  • 2 cups all purpose unbleached flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • tsp ground cinnamon
  • cup granulated sugar
  • cup brown sugar, unpacked
  • ¼ cup melted unsalted butter
  • 2 large egg whites
  • ¼ cup unsweetened apple sauce
  • 2 tsp vanilla extract
  • cup white chocolate chips or chopped white chocolate

The frosting

  • 8 oz 1/3 less fat cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla

The toppings

  • 1 large mango, diced
  • 3 kiwis, diced
  • 1 cup sliced strawberries
  • 1 cup blueberries
  • 1 cup raspberries

Instructions

  1. Preheat the oven to 350°F and prepare a baking pan with cooking spray.
  2. Mix the dry ingredients in one bowl and whisk the wet ingredients in another until fluffy.
  3. Combine the wet and dry mixtures, adding water if necessary to smooth the batter.
  4. Fold in the white chocolate chips and spread the batter evenly in the pan.
  5. Bake for 14 to 16 minutes until golden, then cool completely.
  6. Prepare the frosting by beating the cream cheese, powdered sugar, and vanilla until smooth.
  7. Cut the cooled cookie into squares and then into triangles.
  8. Spread frosting over the cookie triangles and top with fresh fruit.
  9. Refrigerate until ready to serve.
