Instructions
- Preheat the oven to 350°F (177°C) and line a baking sheet or pizza pan with parchment paper.
- In a medium bowl, cream together sugar, butter, egg, vanilla, and almond extract until light and fluffy.
- In another bowl, sift together flour, baking powder, and salt, then add to the butter mixture.
- Chill the dough in the fridge for about 30 minutes until firm.
- Roll out the dough into a 14-inch circle and bake for 10-12 minutes. Allow to cool completely.
- For the frosting, mix cream cheese, butter, vanilla, and heavy cream until fluffy, then gradually add powdered sugar.
- Spread the cream cheese frosting over the cooled cookie crust.
- Arrange the sliced fruit over the frosting as desired.
- Slice and serve cold or at room temperature. Refrigerate until ready to serve.
