Ingredients

Brown Sugar Cookie Crust

  • cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter
  • ½ cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract

Cream Cheese Frosting

  • 1 package (8 ounces) low-fat cream cheese
  • 2–3 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • a pinch fine sea salt

Toppings

  • to taste fresh strawberries
  • to taste other fresh fruits (blueberries, raspberries, blackberries, etc.)
  • to drizzle honey (optional)

Instructions

  1. 1. Preheat the oven to 350°F and grease your pan.
  2. 2. Whisk together the flour, baking powder, and salt in a medium bowl.
  3. 3. In a large bowl, beat the butter and sugar until light and fluffy, then add the egg and extracts and mix well.
  4. 4. Gradually add the dry ingredients and mix until just combined.
  5. 5. Press the dough evenly into the prepared pan and poke holes to prevent bubbling.
  6. 6. Bake for 15-18 minutes until lightly golden, then cool for 20 minutes.
  7. 7. While cooling, whisk together the frosting ingredients until combined.
  8. 8. Spread the frosting over the cooled crust, top with fruit, and drizzle with honey if desired.
  9. 9. Slice and serve immediately for best results.
