Instructions
- Preheat the oven to 350°F and spray a pizza pan with cooking spray.
- Cream together the butter and sugar, then add the egg, lemon zest, and vanilla, mixing until combined.
- In a separate bowl, whisk together the flour, baking soda, cream of tartar, and salt.
- Add the dry mixture to the wet mixture on low speed until just combined.
- Bake for 10-12 minutes until the crust is light golden brown, then let it cool.
- Prepare the frosting by mixing the cream cheese, sugars, lemon juice, and lemon zest until smooth, then spread it over the cooled crust.
- Arrange the fruit on top of the frosting, chill until ready to serve, and cut into wedges.
