Ingredients

The crust

  • 16 ounce sugar cookie dough
  • as needed none cooking spray

The frosting

  • 8 ounce cream cheese
  • 4 tablespoons unsalted butter
  • ¼ teaspoon salt
  • 2 cups powdered sugar
  • ½ teaspoon vanilla extract
  • 1 teaspoon milk

The topping

  • 3 cups fresh fruit (sliced kiwi, blueberries, raspberries, blackberries, grapes)
  • ½ cup apricot jam (strained)

Instructions

  1. Preheat the oven to 350°F and coat a 12-inch pizza pan with cooking spray.
  2. Press the cookie dough evenly into the pan and bake for 12-14 minutes until light golden brown.
  3. Let the crust cool completely in the pan.
  4. To make the frosting, beat the butter and cream cheese together for 3 minutes until smooth.
  5. Add the powdered sugar, vanilla, salt, and milk, then beat on high for an additional 3-5 minutes until light and fluffy.
  6. Spread the frosting over the cooled crust.
  7. Arrange the fresh fruit on top of the frosting.
  8. Heat the apricot jam in the microwave for 10 seconds until melted and brush it over the fruit.
  9. Serve immediately or cover and chill for up to 6 hours.
