Instructions
- Combine pecans, coconut, almond butter, and dates in a food processor and process until a ball forms.
- Stop to scrape down the sides of the processor as needed.
- Once combined, remove the blade and line a baking sheet with parchment paper.
- Roll the mixture into balls and place them on the lined baking sheet.
- If using, roll the balls in cacao nibs and drizzle with additional almond butter.
- Place in the fridge or freezer to set, then store in an airtight container.
