Ingredients

Salad Ingredients

  • 6 cups salad greens
  • 1 cup marinated chickpeas
  • 1 cup roasted or marinated artichokes, quartered
  • ½ cup stuffed green olives
  • ½ cup black olives
  • ½ cup sliced salami or prosciutto
  • 1 cup marinated mushrooms
  • 1 cup roasted red bell peppers, sliced
  • 1 cup sliced cucumbers
  • 1 cup cherry tomatoes
  • 1 cup Parmesan crisps

Marinated Mozzarella Balls

  • 1 8-ounce carton mozzarella cheese balls (bocconcini), drained
  • ½ cup extra virgin olive oil
  • ½ piece lemon peel, cut into long strips
  • teaspoon red pepper flakes
  • teaspoon kosher salt

Salad Dressing

  • cup extra virgin olive oil
  • 2 tablespoons golden balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar
  • 1 teaspoon dried tarragon
  • ½ teaspoon freshly cracked black pepper
  • ¼ teaspoon kosher salt

Instructions

  1. Place the salad greens in the center of a large platter.
  2. Arrange the remaining ingredients in groups around the greens.
  3. Let guests create their own salads and serve with the salad dressing on the side.
  4. To prepare the marinated mozzarella balls, combine mozzarella, olive oil, lemon strips, red pepper flakes, and salt in a jar or bowl and marinate for 1 hour to 1 week.
  5. For the salad dressing, mix olive oil, balsamic vinegar, Dijon mustard, sugar, tarragon, pepper, and salt in a jar and shake until combined.
