Italian Chopped Salad

The Salad

small head
iceberg lettuce

head
radicchio
-

small
red onion, thinly sliced

cherry tomatoes, halved or quartered

chickpeas, rinsed and drained

fresh pearl mozzarella, drained

ounces
provolone cheese, diced

pepperoncini, stemmed and sliced

oregano, for garnish

sea salt and freshly ground black pepper
Instructions
- Whisk together the dressing ingredients in a small bowl and set aside.
- Prepare the lettuce by cutting it in half, removing the core, and slicing into strips. Repeat with the radicchio.
- In a large bowl, combine the lettuce, radicchio, tomatoes, chickpeas, mozzarella, provolone, and pepperoncini.
- Drizzle the salad with the dressing and toss gently to coat.
- Season with salt and pepper, toss again, sprinkle with extra oregano, and serve.
