Ingredients

The salad

  • 10 ounces chopped romaine lettuce
  • ½ medium head radicchio
  • ½ medium red onion
  • 2 ribs celery
  • 1 pint cherry tomatoes
  • cup pickled pepperoncini peppers
  • cup oil-packed sun-dried tomatoes
  • 1 can (15 ounces) chickpeas
  • 1 cup (4 ounces) provolone cheese (optional)

The Italian vinaigrette

  • cup extra-virgin olive oil
  • cup red wine vinegar
  • 1 tablespoon Dijon mustard
  • 2 teaspoons dried oregano
  • 1 teaspoon honey
  • 2 cloves garlic
  • 10 twists freshly ground black pepper
  • ¼ teaspoon salt
  • 1 pinch red pepper flakes (optional)

Instructions

  1. Combine the chopped lettuce, radicchio, onion, celery, cherry tomatoes, peppers, sun-dried tomatoes, chickpeas, and cheese in a large bowl.
  2. Prepare the dressing by whisking together the olive oil, red wine vinegar, Dijon mustard, oregano, honey, garlic, black pepper, salt, and red pepper flakes in a measuring cup.
  3. Drizzle the dressing over the salad and toss to combine, or store the salad and dressing separately for later use.
