Ingredients

Mustard Vinaigrette

  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • 1 tablespoon Dijon mustard
  • ½ teaspoon dried marjoram
  • to taste salt
  • to taste black pepper

Salad

  • 2 large hearts romaine lettuce
  • 4 medium Roma tomatoes
  • 1 cup canned garbanzo beans
  • 8 ounces Genoa salami
  • 8 ounces deli turkey
  • 8 ounces shredded mozzarella cheese
  • to garnish fresh basil

Instructions

  1. Prepare the vinaigrette by mixing olive oil, red wine vinegar, Dijon mustard, marjoram, salt, and pepper in a bowl or jar.
  2. In a large bowl, add the shredded romaine lettuce and drizzle with the vinaigrette, tossing to combine.
  3. Top the lettuce with chopped tomatoes, chickpeas, salami, turkey, and mozzarella, then toss again.
  4. Garnish with fresh basil and serve with any extra dressing on the side.
