Instructions
- Soak the red onion in cold water to reduce its harshness.
- Rehydrate the sun-dried tomatoes in hot water.
- Remove the stems from the kale, chop the leaves, and massage them with salt until tender.
- Add the romaine, cherry tomatoes, chickpeas, cheese, salami, pepperoncini, and olives to the kale.
- Whisk together the dressing ingredients in a bowl.
- Drain the onion and sun-dried tomatoes and add them to the salad mixture.
- Drizzle dressing over the salad, toss to combine, and serve.
