Ingredients

The salad

  • ½ medium red onion
  • ½ cup chopped dry-packed sun-dried tomatoes
  • 8 ounces kale
  • 1 large head romaine
  • 1 pint cherry tomatoes
  • 1 15-ounce can chickpeas
  • 4 ounces Provolone cheese
  • 4 ounces salami
  • ½ cup pepperoncini peppers
  • ½ cup kalamata olives

The dressing

  • cup red wine vinegar
  • ¼ cup extra virgin olive oil
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic
  • ½ teaspoon honey
  • 2 ½ teaspoons dried oregano
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Soak the red onion in cold water to reduce its harshness.
  2. Rehydrate the sun-dried tomatoes in hot water.
  3. Remove the stems from the kale, chop the leaves, and massage them with salt until tender.
  4. Add the romaine, cherry tomatoes, chickpeas, cheese, salami, pepperoncini, and olives to the kale.
  5. Whisk together the dressing ingredients in a bowl.
  6. Drain the onion and sun-dried tomatoes and add them to the salad mixture.
  7. Drizzle dressing over the salad, toss to combine, and serve.
