Easy Italian Salad

Ingredients

The salad

  • 1 head Romaine lettuce, chopped
  • 1 small head radicchio, chopped (optional)
  • ½ medium red onion, thinly sliced
  • 1 pint cherry tomatoes, sliced in half
  • ½ cup sliced pepperoncini (optional)
  • ½ cup shredded Parmesan cheese
  • 1 cup croutons or canned chickpeas

The dressing

  • cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder (or 1 minced garlic clove)
  • ½ teaspoon dried oregano
  • ¾ teaspoon fine sea salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Prepare the toppings by making croutons or using canned chickpeas for added crunch.
  2. In a mason jar, combine olive oil, red wine vinegar, lemon juice, mustard, garlic, oregano, salt, and pepper to make the dressing.
  3. In a large bowl, mix chopped romaine, radicchio (if using), red onion, cherry tomatoes, pepperoncinis, and Parmesan cheese.
  4. Drizzle dressing over the salad and toss well. Adjust dressing to taste.
  5. Add croutons just before serving to maintain their crunch.
