The dressing

Instructions
- Prepare the toppings by making croutons or using canned chickpeas for added crunch.
- In a mason jar, combine olive oil, red wine vinegar, lemon juice, mustard, garlic, oregano, salt, and pepper to make the dressing.
- In a large bowl, mix chopped romaine, radicchio (if using), red onion, cherry tomatoes, pepperoncinis, and Parmesan cheese.
- Drizzle dressing over the salad and toss well. Adjust dressing to taste.
- Add croutons just before serving to maintain their crunch.
