Ingredients

The salad

  • 6 cups romaine lettuce, coarsely chopped
  • 1 cup cherry tomatoes, halved
  • ¾ cup cucumber, quartered and sliced
  • ¼ cup red onion, thinly sliced
  • cup pepperoncini peppers, whole
  • ½ cup black olives, sliced
  • ¾ cup croutons
  • ¼ cup parmesan cheese, shaved

The dressing

  • 1 packet Italian dressing mix
  • ¾ cup extra virgin olive oil
  • cup white wine vinegar
  • ¼ cup water
  • ½ teaspoon granulated sugar
  • ½ teaspoon Italian seasoning
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • 2 tablespoons mayonnaise

Instructions

  1. Combine the lettuce, cherry tomatoes, cucumber, red onion, pepperoncini, olives, croutons, and parmesan in a large bowl.
  2. In a separate bowl, whisk together all dressing ingredients until smooth.
  3. Pour about ⅔ cup of the dressing over the salad and toss to combine.
  4. Serve immediately.
