Ingredients

The salad

  • 2 cups Roma tomatoes (diced)
  • 2 cups Cucumbers (diced)
  • cups Bell peppers (diced)
  • ½ cup Onion (diced)
  • 2 tbsp Fresh parsley

The dressing

  • ¼ cup Olive oil
  • 1 tbsp Lemon juice
  • ½ tsp Sea salt
  • ¼ tsp Black pepper

Instructions

  1. Combine olive oil, lemon juice, sea salt, and black pepper in a bowl and whisk until emulsified.
  2. Add the chopped tomatoes, cucumbers, bell peppers, onions, and parsley to the dressing.
  3. Toss everything together to coat the vegetables with the dressing.
