Ingredients

The Tofu Nuggets

  • 1 pound tofu, firm or extra-firm
  • ¾ – 1 cup dill pickle juice
  • oil for frying vegetable, canola, or peanut oil

The Tofu Nugget Breading

  • 1 cup cornstarch
  • tablespoons powdered sugar
  • ½ teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon powdered mustard
  • ½ teaspoon black pepper

The Honey Mustard Sauce

  • ¼ cup vegan mayonnaise
  • 1 tablespoon yellow mustard
  • ½ teaspoon Dijon mustard
  • 1 tablespoon agave nectar
  • ¾ teaspoon lemon juice
  • ¼ teaspoon turmeric

Instructions

  1. Tear the tofu into nugget-sized pieces and marinate in pickle juice for 25 minutes.
  2. While the tofu marinates, mix the breading ingredients in a small bowl.
  3. In another bowl, combine all honey mustard ingredients and refrigerate.
  4. After marinating, drain the tofu and coat it in the breading mixture.
  5. Heat oil in a skillet over medium-high heat and fry the breaded tofu in batches until golden brown.
  6. Drain the fried tofu on paper towels or a wire rack and serve warm with the honey mustard sauce.
