Ingredients

  • 1 lb extra firm tofu, drained and pressed
  • ½ cup unsweetened almond milk
  • ¼ cup almond meal
  • ¼ cup breadcrumbs (sub gluten-free if necessary)
  • ¼ cup cornmeal
  • 2 tbsp nutritional yeast
  • ½ tsp garlic powder
  • ½ tsp chili powder
  • ½ tsp smoked paprika
  • ¾ tsp salt

Instructions

  1. Press the tofu for at least 30 minutes to remove excess moisture.
  2. Preheat the oven to 425°F and prepare a baking sheet with parchment paper.
  3. Pour almond milk into a shallow dish.
  4. In another shallow dish, combine almond meal, breadcrumbs, cornmeal, nutritional yeast, garlic powder, chili powder, smoked paprika, and salt.
  5. Cut the tofu into 10-12 slices, dip each slice in almond milk, then dredge in the breadcrumb mixture, ensuring they are well coated.
  6. Arrange the coated tofu slices in a single layer on the baking sheet.
  7. Bake for 20 minutes, flip the nuggets, and bake for an additional 15 minutes.
  8. Serve with your choice of dipping sauce.
