Mediterranean Chicken Wraps

Ingredients

The chicken and seasoning

  • 1 tablespoon extra virgin olive oil
  • 1 clove garlic, minced
  • ½ teaspoon dried basil
  • ½ teaspoon oregano
  • ½ teaspoon fresh rosemary, minced
  • 1 lb raw boneless skinless chicken breasts, sliced into thin strips

The wrap assembly

  • 6 pieces low carb high fiber tortillas
  • 12 tablespoons garlic hummus
  • 12 tablespoons crumbled Feta cheese
  • 1 large plum tomato, diced

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add minced garlic, basil, oregano, and rosemary to the oil and cook until fragrant.
  3. Add the chicken strips to the skillet and stir to coat with the oil and herbs.
  4. Cook the chicken for 5-7 minutes until fully cooked.
  5. Warm the tortillas in the microwave for about a minute to make them pliable.
  6. Spread 2 tablespoons of hummus on each tortilla.
  7. Divide the cooked chicken strips evenly among the tortillas.
  8. Sprinkle 2 tablespoons of feta cheese over the chicken on each wrap.
  9. Add diced tomato pieces on top.
  10. Fold the ends of the tortilla in and roll the sides over to close the wrap.
  11. Cut each wrap in half and serve.
