Ingredients

Garlic Marinated Chicken Thighs

  • ¼ cup olive oil
  • ¼ cup lemon juice
  • 3 cloves garlic, minced
  • ½ Tbsp dried oregano
  • ½ tsp salt
  • to taste freshly cracked pepper
  • 6 pieces boneless, skinless chicken thighs (about 1.8 lbs.)

Dill Yogurt Sauce

  • ½ cup plain Greek style yogurt
  • ½ tsp dried dill
  • 1 Tbsp lemon juice
  • ¼ tsp salt

Wrap Ingredients

  • 1 pint grape tomatoes
  • 1 cucumber
  • ¼ piece red onion
  • 6 pieces flatbread
  • 10 oz. container hummus

Instructions

  1. Prepare the garlic chicken marinade by combining olive oil, lemon juice, garlic, oregano, salt, and pepper in a bag or dish and add the chicken thighs to marinate for 30 minutes.
  2. While the chicken marinates, mix the dill yogurt sauce ingredients in a bowl and set aside.
  3. Slice the grape tomatoes, dice the cucumber, and thinly slice the red onion, soaking the onion in ice water for 5-10 minutes to reduce sharpness.
  4. Cook the marinated chicken thighs in a skillet over medium heat for 5-7 minutes on each side until browned and cooked through, then let rest before slicing.
  5. To assemble the wraps, spread hummus on flatbread, add sliced chicken, tomatoes, cucumbers, onions, and dollops of dill yogurt sauce, then wrap and enjoy.
