Ingredients

The chicken and marinade

  • 4 tablespoons olive oil
  • 1 pound boneless, skinless chicken, cut into strips
  • 2 cloves garlic, minced or grated
  • 1 tablespoon smoked paprika
  • ¼ cup fresh oregano, chopped
  • 1 whole lemon, sliced
  • to taste kosher salt and pepper

The fries

  • 2 potatoes cut into matchsticks

The wraps

  • 4 pieces warmed pitas (optional)
  • 1 head butter lettuce
  • 2 Persian cucumbers, cut into matchsticks
  • 1 whole avocado, sliced
  • cup kalamata olives, pitted
  • to taste feta cheese, pickled red onion and microgreens, for serving

Pistachio Basil Goddess Sauce

  • ½ cup roasted pistachios
  • 2 tablespoons lemon juice
  • 1 clove garlic
  • 1 cup fresh basil
  • 1 whole jalapeno, halved (seed if desired)
  • to taste kosher salt

Instructions

  1. Combine olive oil, chicken, garlic, smoked paprika, oregano, lemon, salt, and pepper in a ziplock bag and marinate for 30 minutes to overnight.
  2. Preheat the oven to 425°F.
  3. Place the marinated chicken in a baking dish and roast for 20-25 minutes until cooked through.
  4. Toss potatoes with remaining olive oil, salt, and pepper, then bake for 20-30 minutes until golden and crisp.
  5. Assemble the wraps by layering lettuce in a warm pita, adding fries and chicken, then topping with cucumber, avocado, olives, feta, onion, and greens.
  6. For the sauce, blend all ingredients with water until combined, adjusting consistency and salt as needed.
