Ingredients

The tostadas

  • 4-6 pieces Hard Shell Corn Tortillas
  • 10 oz Refried Black Beans
  • 5 oz Fresh Pico De Gallo
  • 1 cup Mexican Shredded Cheese
  • 1 whole Instant Pot Whole Roasted Chicken or pre-roasted chicken

For the Cilantro Avocado Cream Sauce

  • 2 medium Avocados
  • 1 tbsp Pico De Gallo
  • cup Sour Cream
  • 1 tbsp Lemon Juice
  • 2 tbsp Cilantro Flakes
  • 1 tbsp Parsley Flakes
  • ½ tsp Paprika
  • ½ tsp Black Pepper
  • ½ tsp Garlic Powder
  • 2 dashes Red Cayenne Pepper
  • ¼ tsp Himalayan Salt

Instructions

  1. Follow the instructions for the Instant Pot Whole Roasted Chicken recipe.
  2. Slightly toast the corn tortillas and heat the refried black beans.
  3. Layer the corn tortillas with black beans, then top with shredded cheese.
  4. Add the shredded chicken on top of the cheese, followed by pico de gallo.
  5. For the avocado cream sauce, remove the shell and seed from the avocados, then place them in a bowl.
  6. Add all sauce ingredients to the bowl and mix until smooth.
  7. Top the tostadas with the cream sauce and serve immediately.
