Minty Iced Matcha Latte

Instructions
- Soak the cashews in water for at least 4 hours or overnight if not using a high-powered blender.
- Drain and rinse the soaked cashews, then place them in a blender.
- Add 2 tablespoons of honey or maple syrup, mint, matcha, vanilla, and a dash of salt to the blender.
- Pour in 2 cups of water and blend on low, gradually increasing the speed until the cashews are fully pulverized.
- Add the remaining 2 cups of water and blend again. Adjust sweetness if necessary.
- Pour the mixture over ice in a glass and garnish with a sprig of mint if desired.
- Store any leftovers in a covered container in the refrigerator for up to 4 days.
