Ingredients

The salad

  • 4 cups shredded kale, packed
  • 1 teaspoon olive oil
  • 2 cups shredded purple cabbage
  • 2 large carrots, peeled and grated
  • 1 large red pepper, minced
  • ¼ cup cilantro, minced
  • ½ cup onion, minced (any kind)
  • 2 tablespoons sesame seeds

Sesame Soy Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon sesame oil
  • 2 cloves minced garlic
  • ½ teaspoon salt
  • ¼ cup soy sauce
  • 1 tablespoon maple syrup
  • ¼ teaspoon red pepper flakes
  • 1 teaspoon dijon mustard

Instructions

  1. Make the Asian Salad Dressing by sautéing minced garlic in olive oil to infuse flavor.
  2. In a large mixing bowl, place the shredded kale and drizzle with olive oil.
  3. Massage the olive oil into the kale for 2-3 minutes until soft.
  4. Add the remaining salad ingredients to the bowl and mix well.
  5. Pour the dressing over the salad and toss until combined.
