Red Beans and Rice Bake

Ingredients

  • 1 ¼ cup long grain white rice
  • 15 ounce can red beans
  • 1 small sweet yellow onion
  • 1 medium green bell pepper
  • 2 ribs celery
  • 4-5 cloves garlic
  • 2 tablespoons butter
  • 2 tablespoons tomato paste
  • 2 tablespoons salt-free Cajun seasoning
  • 1 teaspoon dry thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon kosher salt
  • 1 tablespoon vegetarian Worcestershire sauce
  • 2 cups vegetable broth
  • 2-3 pieces vegan sausages
  • ¼ cup chopped parsley

Instructions

  1. Preheat the oven to 375°F.
  2. In a baking dish, combine the rice, drained beans, onion, pepper, celery, garlic, butter, tomato paste, Cajun seasoning, thyme, garlic powder, onion powder, and salt.
  3. Pour in the Worcestershire sauce and vegetable broth, and stir to combine.
  4. Cover the dish tightly with a lid or foil and bake for 25 to 30 minutes until the rice is cooked through.
  5. While the rice bakes, pan-fry the sliced sausages until golden, about 4-5 minutes.
  6. Remove the casserole from the oven and stir in the pan-fried sausage and parsley.
  7. If the rice is too liquidy, return it to the oven uncovered for 5 minutes before serving.
