Grain-free, Nut-free Vegan Chocolate Chunk Cookies

Ingredients

Wet Ingredients

  • ¼ cup natural smooth sunflower seed butter
  • 2 tablespoons packed brown sugar
  • 2 tablespoons pure maple syrup
  • tablespoons coconut oil or grapeseed oil

Dry Ingredients

  • 6 tablespoons raw sunflower seeds
  • 3 tablespoons cassava flour
  • 1 teaspoon ground chia seed
  • ¼ teaspoon baking soda
  • ¼ teaspoon fine sea salt
  • cup dark chocolate squares

Instructions

  1. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the wet ingredients until smooth.
  3. Process the raw sunflower seeds in a food processor until finely ground.
  4. Combine the dry ingredients with the wet mixture and stir until well mixed.
  5. Chop the dark chocolate and mix it into the dough, reserving some for topping.
  6. Scoop small mounds of dough onto the prepared baking sheet and top with reserved chocolate.
  7. Bake for 10 to 11 minutes until soft and tender.
  8. Cool on the baking sheet for 10 minutes, then transfer to a cooling rack for additional cooling.
