Easy Red Wine Vinegar Dressing with Thyme

Ingredients

  • ½ cup red wine vinegar
  • ¾ cup olive oil
  • 1 tablespoon fresh thyme leaves, minced
  • 2 tablespoons vegan mayonnaise
  • 1-2 tablespoons agave nectar or fine cane sugar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Tamari soy sauce
  • 1 clove garlic, finely minced
  • to taste sea salt
  • to taste ground black pepper

Instructions

  1. In a sealable jar, combine the red wine vinegar, thyme, vegan mayonnaise, agave nectar, Dijon mustard, Tamari, garlic, salt, and pepper.
  2. Seal the lid on top of the jar and shake well.
  3. Open the jar and add the olive oil.
  4. Seal the lid again and shake until well combined.
  5. Store in the fridge for up to two weeks.
