Ingredients

The chicken

  • 2 ½ pounds boneless skinless chicken thighs
  • 2 teaspoons Italian seasoning
  • 2 teaspoons sea salt
  • ½ teaspoon fresh ground black pepper

The vegetables

  • 2 onions
  • 2 bell peppers

The cheese and rolls

  • 8 slices provolone cheese
  • 8 hoagie rolls

Instructions

  1. Prepare the chicken by placing it in a bowl and adding Italian seasoning, salt, and pepper, then toss to combine.
  2. For the Blackstone griddle, preheat it and oil it well, then cook the onions and peppers for about 8 minutes.
  3. Add the chicken to the griddle and cook for another 8 minutes until cooked through.
  4. Add cheese slices on top of the chicken and cover until melted.
  5. Remove chicken and vegetables, then toast the hoagie rolls on the griddle.
  6. Assemble the sandwiches with the chicken and vegetable mixture.
