Chicken Philly Sandwich

Ingredients

The filling

  • 8 oz Boneless Chicken Breasts or Thighs
  • ½ medium Red Bell Pepper
  • ½ medium Green Bell Pepper
  • ½ large Onion
  • 2 tbsp Avocado Oil
  • 1/2 tsp Garlic Powder
  • 1 tsp Italian Seasoning
  • 4 slices Provolone Cheese

The bread

  • 2 pieces Sausage Rolls or Hoagie Buns

Seasoning

  • to taste Salt
  • to taste Pepper

Instructions

  1. Season the chicken with salt, pepper, and 1/4 tsp of garlic powder, and let it rest.
  2. Slice the red and green bell peppers and onion into thin slices.
  3. Heat 1 tablespoon of oil in a skillet over medium heat and cook the chicken for 3-4 minutes per side until cooked through.
  4. Transfer the chicken to a bowl and cover with foil.
  5. Add the remaining oil to the skillet and sauté the bell peppers and onion with the remaining garlic powder and Italian seasoning for 6-8 minutes until tender.
  6. Slice the cooked chicken into strips and add it back to the skillet with the vegetables, mixing well.
  7. Divide the mixture into two piles in the skillet and place two slices of provolone cheese over each pile to melt.
  8. Warm the sausage rolls in the microwave for about 20 seconds.
  9. Scoop the chicken and vegetable mixture into the warmed rolls and serve hot.
