Instructions
- Season the chicken with salt, pepper, and 1/4 tsp of garlic powder, and let it rest.
- Slice the red and green bell peppers and onion into thin slices.
- Heat 1 tablespoon of oil in a skillet over medium heat and cook the chicken for 3-4 minutes per side until cooked through.
- Transfer the chicken to a bowl and cover with foil.
- Add the remaining oil to the skillet and sauté the bell peppers and onion with the remaining garlic powder and Italian seasoning for 6-8 minutes until tender.
- Slice the cooked chicken into strips and add it back to the skillet with the vegetables, mixing well.
- Divide the mixture into two piles in the skillet and place two slices of provolone cheese over each pile to melt.
- Warm the sausage rolls in the microwave for about 20 seconds.
- Scoop the chicken and vegetable mixture into the warmed rolls and serve hot.
