Ingredients

The filling

  • 1 pound ground chicken or turkey
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 sweet onion sliced thin
  • 1 green pepper sliced thin
  • ½ cup sliced mushrooms (optional)
  • 2 tablespoons Worcestershire sauce
  • ¼ cup soy sauce
  • 1 tablespoon ketchup
  • 16 whole wheat slider buns or 4 regular whole wheat buns, toasted

The cheese sauce

  • ½ tablespoon flour
  • ½ tablespoon butter
  • ¾ cup milk (2% recommended)
  • ¼ teaspoon mustard powder
  • cups shredded provolone cheese
  • 2 tablespoons grated parmesan cheese
  • to taste salt and pepper

Instructions

  1. Heat olive oil in a large skillet over medium-high heat and brown the ground chicken for about 5-6 minutes.
  2. Add sliced onion, mushrooms, and green pepper to the skillet and cook for another 5-10 minutes until the onions are tender.
  3. Stir in Worcestershire sauce, soy sauce, and ketchup, season with salt and pepper, and bring to a bubble for about 2 minutes.
  4. In a separate small saucepan, melt butter over medium-high heat, stir in flour and cook for 1 minute.
  5. Whisk in milk and mustard powder, bring to a bubble, and let thicken for about 2 minutes.
  6. Remove from heat and stir in provolone cheese, parmesan cheese, and a pinch of salt and pepper until melted.
  7. Assemble the sliders by placing a scoop of the chicken mixture on the bottom of each bun, topping with cheese sauce, and adding the top of the bun.
