Instructions
- Combine all filling ingredients in the slow cooker and mix well.
- Cover and cook on low for 4-6 hours.
- Shred the chicken with two forks and return it to the slow cooker, mixing well.
- Set the slow cooker to warm or low until ready to serve.
- Preheat the oven to 350°F and prepare a baking sheet with parchment paper.
- Arrange sweet potato slices on the baking sheet and brush with oil.
- Bake for 25-30 minutes, flipping halfway, until tender and lightly browned.
- Serve the chicken filling between two sweet potato rounds with desired toppings.
