Ingredients

The base

  • 2 cups old-fashioned oats
  • cup wheat germ
  • cup packed brown sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 teaspoon baking powder
  • ½ cup dried cranberries
  • 1 ½ cups skim milk
  • ½ cup canned pumpkin
  • 1 ½ tablespoons unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup apples, chopped

The topping

  • cup chopped pecans

Instructions

  1. Preheat the oven to 375°F and prepare a baking dish with cooking spray.
  2. In a large bowl, mix the oats, wheat germ, brown sugar, cinnamon, salt, baking powder, and cranberries.
  3. In another bowl, combine the milk, pumpkin, melted butter, egg, and vanilla.
  4. Mix the wet ingredients with the dry ingredients and add the chopped apples.
  5. Pour the mixture into the baking dish and spread it evenly.
  6. Sprinkle the pecans on top and bake for 20 minutes until golden.
  7. Slice into eight pieces and serve.
