Instructions
- 1. Preheat the oven to 350°F and grease an 8x8 inch baking dish.
- 2. In a large bowl, mix the egg, coconut milk, maple syrup, and vanilla extract until combined.
- 3. Add the oats, cinnamon, and salt to the mixture and stir together.
- 4. Stir in the chopped cranberries and apple.
- 5. Transfer the mixture to the baking dish and bake for 25 to 30 minutes until set.
- 6. Cool slightly, cut into four pieces, and serve.
