Ingredients

  • ¼ cup peanut butter smooth (or almond butter)
  • cup full fat coconut milk from a can
  • 1-2 teaspoon chile garlic sauce
  • 1 tablespoon low carb brown sugar or Swerve
  • 1 teaspoon Tamari soy sauce (or coconut aminos)
  • 1 teaspoon coconut oil (or sesame oil, or olive oil)
  • ½ teaspoon Thai Red Curry Paste

Instructions

  1. Warm the peanut butter in a microwave-safe bowl.
  2. Whisk in the chile garlic sauce, sweetener, and Tamari soy sauce.
  3. Heat oil in a small pan over medium heat and add the Thai red curry paste, cooking until fragrant.
  4. Combine the oil and curry paste with the peanut butter mixture and whisk to combine.
  5. Slowly add the coconut milk while stirring, adjusting seasonings to taste.
  6. Serve at room temperature or slightly warmed.
