Instructions
- Preheat the oven to 375°F.
- In a medium bowl, combine flour, baking powder, baking soda, and salt.
- In a large mixing bowl, beat together sugar and shortening until well combined.
- Add the egg and mix well, then add sour cream and vanilla, beating until light and fluffy.
- Gradually add the dry ingredients and mix until combined.
- Stir in the orange juice concentrate and orange zest until well mixed.
- Using a cookie scoop or a tablespoon, drop the dough onto a lined baking sheet.
- Bake for 8-10 minutes until cookies are set and starting to turn golden around the edges.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- For the frosting, beat together softened butter, powdered sugar, orange juice concentrate, and orange zest until light and fluffy.
- Pipe or spread the frosting onto the cooled cookies.
