Instructions
- Line an 8x8 baking dish with parchment paper and spray the inside with oil.
- Roughly chop the almonds and spread them evenly in the baking dish.
- In a small pan, combine butter, sweeteners, and vanilla extract over low heat, stirring continuously.
- Insert a candy thermometer and continue stirring until it reaches 290 degrees, then remove from heat.
- Pour the mixture evenly over the almonds in the baking dish.
- Place the pan in the fridge for 5-7 minutes.
- Melt the chocolate in the microwave in 30-second increments.
- Remove the pan from the fridge and drizzle the melted chocolate on top, spreading it evenly with a spatula.
- Sprinkle sea salt flakes on top and return the pan to the fridge for at least an hour.
- Once hardened, lift the toffee out of the pan and break it into pieces.
- Store in the fridge in an airtight container.
