Ingredients

  • ½ cup raw almonds, roughly chopped
  • 1 tsp vanilla extract
  • 1 cup grass fed butter
  • ½ tsp sea salt
  • ¼ cup Lakanto Classic Monk Fruit Sweetener
  • ¼ cup coconut sugar
  • 1 cup dairy free chocolate chips

Instructions

  1. Line an 8x8 baking dish with parchment paper and spray the inside with oil.
  2. Roughly chop the almonds and spread them evenly in the baking dish.
  3. In a small pan, combine butter, sweeteners, and vanilla extract over low heat, stirring continuously.
  4. Insert a candy thermometer and continue stirring until it reaches 290 degrees, then remove from heat.
  5. Pour the mixture evenly over the almonds in the baking dish.
  6. Place the pan in the fridge for 5-7 minutes.
  7. Melt the chocolate in the microwave in 30-second increments.
  8. Remove the pan from the fridge and drizzle the melted chocolate on top, spreading it evenly with a spatula.
  9. Sprinkle sea salt flakes on top and return the pan to the fridge for at least an hour.
  10. Once hardened, lift the toffee out of the pan and break it into pieces.
  11. Store in the fridge in an airtight container.
