Ingredients

  • 1 cup paleo toffee
  • 1 cup coconut flour
  • 1 cup almond flour
  • cup chocolate chips
  • ½ cup chunky almond butter
  • ¼ to ⅓ cup maple syrup
  • 1 tsp vanilla extract
  • to taste coconut sugar, cinnamon, or pumpkin spice (optional)

Instructions

  1. Chop the toffee and place it in a mixing bowl.
  2. Add almond meal, coconut flour, and chocolate chips, then mix well.
  3. Incorporate the almond butter and stir the mixture together.
  4. Gradually add maple syrup, adjusting the amount based on the flour used.
  5. Mix in the vanilla extract thoroughly using your hands.
  6. Form the mixture into balls about 1 to 1.5 inches in size and place them on a tray lined with parchment paper.
  7. Freeze the bites for 20-30 minutes, then transfer them to a Ziplock bag.
  8. Dust the frozen bites with cinnamon, coconut sugar, or pumpkin spice if desired.
  9. Store in a covered container or Ziplock bag in the fridge or freezer for up to 6 weeks.
