Mexican Tortilla Pie

Instructions
- Preheat the oven to 400°F.
- In a large bowl, mash the pinto beans and stir in ¾ cup of salsa and minced garlic.
- In a separate bowl, mix together ¼ cup of salsa, cilantro, refried beans, and chopped tomatoes.
- Place one tortilla in a greased pie plate and spread ¾ cup of the pinto bean mixture over it.
- Top with ¼ cup of humnut cheese and cover with another tortilla.
- Spread ⅔ cup of refried beans on top and add another ¼ cup of humnut cheese.
- Repeat the layering process twice more.
- Cover with the last tortilla and spread the remaining pinto bean mixture and humnut cheese on top, then drizzle with enchilada sauce.
- Bake for about 35 minutes.
