Mexican Tortilla Pie

Ingredients

The filling

  • 2 cans pinto beans
  • 1 cup salsa
  • 2 cloves garlic
  • 2 tablespoons chopped fresh cilantro
  • 1 can refried beans
  • ½ cup chopped tomatoes

The layers

  • 7 tortillas flour tortillas
  • ½-¾ cup Mae’s humnut cheese sauce
  • to taste dried parsley
  • to taste enchilada sauce

Mae’s Humnut Cheese

  • 2-3 tablespoons hummus
  • 1 tablespoon nutritional yeast
  • a pinch turmeric
  • to thin water

Instructions

  1. Preheat the oven to 400°F.
  2. In a large bowl, mash the pinto beans and stir in ¾ cup of salsa and minced garlic.
  3. In a separate bowl, mix together ¼ cup of salsa, cilantro, refried beans, and chopped tomatoes.
  4. Place one tortilla in a greased pie plate and spread ¾ cup of the pinto bean mixture over it.
  5. Top with ¼ cup of humnut cheese and cover with another tortilla.
  6. Spread ⅔ cup of refried beans on top and add another ¼ cup of humnut cheese.
  7. Repeat the layering process twice more.
  8. Cover with the last tortilla and spread the remaining pinto bean mixture and humnut cheese on top, then drizzle with enchilada sauce.
  9. Bake for about 35 minutes.
