Burrito Pie

The tortillas and cheese

burrito-size tortillas

shredded cheese (cheddar, colby jack, or pepperjack)
Instructions
- Preheat the oven to 350°F.
- Brown the ground beef in a skillet over medium heat, then add the onion and garlic until tender.
- Stir in the taco seasoning and then add the black olives, green chilies, diced tomatoes, corn, enchilada sauce, and refried beans. Simmer and remove from heat.
- Spread ½ cup of the mixture in a 9x13 inch pan, and layer with one whole tortilla and one half tortilla.
- Add 1½ cups of the mixture on top, sprinkle with cheese, and layer with another 1½ tortillas. Repeat until all tortillas are used, finishing with the meat mixture and cheese on top.
- Bake for 25-30 minutes until heated through and cheese is melted.
