7-Layer Tortilla Pie

Ingredients

The filling

  • 2 cans pinto beans
  • 1 cup salsa
  • 2 cloves garlic
  • 2 tablespoons chopped fresh cilantro
  • 1 can black beans
  • ½ cup chopped tomatoes

The layers

  • 7 tortillas flour tortillas
  • 2 cups shredded reduced-fat Cheddar cheese
  • 1 cup salsa
  • ½ cup sour cream

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mash the pinto beans and mix in ¾ cup of salsa and minced garlic.
  3. In another bowl, combine ¼ cup salsa, cilantro, black beans, and chopped tomatoes.
  4. Place one tortilla in a pie plate and spread ¾ cup of the pinto bean mixture on top.
  5. Sprinkle ¼ cup of cheese over the bean mixture and cover with another tortilla.
  6. Spread ⅔ cup of the black bean mixture on the second tortilla and top with another ¼ cup of cheese.
  7. Repeat the layering process twice more, finishing with a tortilla on top.
  8. Spread the remaining pinto bean mixture and cheese on the top tortilla.
  9. Cover with foil and bake for about 40 minutes.
  10. Cut into wedges and serve with salsa and sour cream.
