Ingredients

Dressing Ingredients

  • ½ cup seasoned rice wine vinegar
  • ¾ cup extra virgin olive oil
  • 1 tablespoon grainy mustard
  • 3 tablespoons honey or sweetener of choice
  • 1 whole lemon (juice and zest)
  • 2 cloves garlic (minced)

Salad Ingredients

  • 16 ounces boneless chicken breast
  • 12 ounces spring mix
  • 1 cup cherry tomatoes (halved)
  • 1 whole carrot (peeled and shredded)
  • 2 whole avocados (pitted and diced)
  • cup chopped chives
  • ¼ cup chopped parsley
  • 3 ounces crumbled goat cheese

Instructions

  1. Combine the dressing ingredients in a blender and blend until smooth.
  2. Preheat a grill pan to medium-high heat, season the chicken, and grill until golden brown and cooked through.
  3. Let the chicken rest for 15 minutes before slicing.
  4. In a large bowl, combine the salad ingredients and toss with the desired amount of dressing.
  5. Top the salad with crumbled goat cheese and serve.
