Ingredients

The Goat Cheese

  • 10.5 ounces goat cheese
  • 1 cup gluten free breadcrumbs
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon sea salt
  • ½ teaspoon fresh ground pepper
  • 1 large egg
  • as needed oil Avocado Oil for Frying

The Dressing

  • ½ cup balsamic vinegar
  • ¼ cup minced red onion
  • 2 tablespoons Maple Syrup
  • 1 tablespoon Dijon Mustard
  • 1 teaspoon minced garlic
  • ½ teaspoon sea salt
  • ½ cup extra virgin olive oil

The Salad

  • 5 ounces baby arugula
  • 1 cup seedless red grapes, halved
  • ½ red onion sliced thin
  • ¼ cup toasted walnuts, chopped

Instructions

  1. Make gluten free breadcrumbs by processing gluten free bread and baking the crumbs at 300°F for 5 minutes, then let them sit in the oven for 45 minutes.
  2. Slice goat cheese into rounds and coat them in a mixture of breadcrumbs, onion powder, garlic powder, salt, and pepper after dipping in whisked egg.
  3. Heat avocado oil in a pan and fry the goat cheese rounds until browned, about 1-2 minutes per side.
  4. Blend balsamic vinegar, red onion, maple syrup, Dijon mustard, garlic, and sea salt to make the dressing, then add olive oil while blending until smooth.
  5. In a large bowl, toss arugula, grapes, onion, and walnuts with the desired amount of dressing, then top with the warm goat cheese rounds.
