Instructions
- Make gluten free breadcrumbs by processing gluten free bread and baking the crumbs at 300°F for 5 minutes, then let them sit in the oven for 45 minutes.
- Slice goat cheese into rounds and coat them in a mixture of breadcrumbs, onion powder, garlic powder, salt, and pepper after dipping in whisked egg.
- Heat avocado oil in a pan and fry the goat cheese rounds until browned, about 1-2 minutes per side.
- Blend balsamic vinegar, red onion, maple syrup, Dijon mustard, garlic, and sea salt to make the dressing, then add olive oil while blending until smooth.
- In a large bowl, toss arugula, grapes, onion, and walnuts with the desired amount of dressing, then top with the warm goat cheese rounds.
