Ingredients

Roasted Red Pepper Dressing

  • ½ cup Roasted red peppers
  • ½ cup Olive oil
  • 3 tbsp Balsamic vinegar
  • 1 tbsp Honey
  • 2 cloves Garlic
  • ½ tsp Italian seasoning
  • ½ tsp Sea salt
  • ¼ tsp Black pepper

Goat Cheese Salad

  • 2 8-oz Boneless skinless chicken breasts
  • 1 tsp Sea salt
  • ¼ tsp Black pepper
  • 1 tbsp Olive oil
  • 6 oz Spring mix
  • cup Sun-dried tomatoes
  • ¾ cup Goat cheese
  • ¼ cup Walnuts
  • 1 medium Avocado

Instructions

  1. Make the dressing by blending all dressing ingredients in a food processor until smooth and set aside.
  2. Pat the chicken breasts dry and season with salt and pepper.
  3. Heat olive oil in a grill pan or skillet over medium-high heat, cook chicken for 4-8 minutes per side until cooked through, then let rest.
  4. In a large bowl, place the spring mix and top with sliced chicken, sun-dried tomatoes, goat cheese, walnuts, and avocado.
  5. Drizzle the dressing over the salad and toss to combine.
