Tomato Goat Cheese Salad

The salad

Instructions
- Slice the onion thinly and place it in a bowl.
- In a saucepan, bring vinegar, honey, sea salt, pepper, and crushed red pepper to a boil.
- Pour the mixture over the onions and let it sit for at least 30 minutes.
- Drain the vinegar mixture, reserving 3 tablespoons for the dressing.
- In a bowl, combine the drained onions and tomatoes, and toss them together.
- Make the dressing by blending the reserved vinegar, mustard, salt, pepper, and olive oil until smooth.
- Pour the dressing over the salad, toss to coat, and top with goat cheese.
- Serve immediately or let sit at room temperature for two hours to meld flavors.
