Tomato Goat Cheese Salad

Ingredients

The pickled onions

  • 1 medium red onion
  • ½ cup red wine vinegar
  • 1 tablespoon honey
  • ½ teaspoon sea salt
  • ¼ teaspoon fresh ground black pepper
  • pinch crushed red pepper

The salad

  • 2 pounds tomatoes
  • 2 ounces goat cheese

The dressing

  • 2 teaspoons Dijon mustard
  • ½ teaspoon sea salt
  • ½ teaspoon fresh ground pepper
  • ¼ cup extra virgin olive oil

Instructions

  1. Slice the onion thinly and place it in a bowl.
  2. In a saucepan, bring vinegar, honey, sea salt, pepper, and crushed red pepper to a boil.
  3. Pour the mixture over the onions and let it sit for at least 30 minutes.
  4. Drain the vinegar mixture, reserving 3 tablespoons for the dressing.
  5. In a bowl, combine the drained onions and tomatoes, and toss them together.
  6. Make the dressing by blending the reserved vinegar, mustard, salt, pepper, and olive oil until smooth.
  7. Pour the dressing over the salad, toss to coat, and top with goat cheese.
  8. Serve immediately or let sit at room temperature for two hours to meld flavors.
