Ingredients

The salad

  • 1 3/4 lbs grape tomatoes or cherry tomatoes, halved
  • 1 pkg. fresh mozzarella pearls (8 oz)

The dressing

  • ¼ cup extra virgin olive oil
  • 3 Tbsp red wine vinegar
  • 1 tsp minced garlic
  • 1 tsp honey
  • ¼ cup chopped fresh parsley
  • 2 Tbsp chopped fresh basil
  • ½ tsp dried oregano
  • to taste salt and freshly ground black pepper

Instructions

  1. Whisk together olive oil, red wine vinegar, garlic, honey, parsley, basil, oregano, salt, and pepper in a mixing bowl to make the dressing.
  2. In a medium salad bowl, toss the tomatoes with the dressing, then add the mozzarella and toss again.
  3. For better flavor, let the salad marinate in the refrigerator for 30 minutes before serving.
  4. Serve within a few hours for best results.
