Easy Tomato Salad

chopped red onion

cherry tomatoes, halved

additional tomatoes, cut into wedges

thinly sliced fresh basil

extra-virgin olive oil

thick balsamic vinegar or balsamic glaze

flaky sea salt or kosher salt

freshly ground black pepper
Optional additions

English cucumber or Persian cucumber, thinly sliced

torn mozzarella ball or around 1 cup mini mozzarella balls

ripe avocado, sliced or diced

handful
baby arugula
Instructions
- Soak the chopped red onion in ice water to improve its flavor and crispness.
- Layer the tomato wedges on a serving platter and drain the onions well.
- Add one-third of the onions on top of the tomatoes, followed by half of the cherry tomatoes.
- If using, add any optional ingredients, then another third of the onions.
- Finish layering with the remaining cherry tomatoes and onions, then sprinkle the basil on top.
- Drizzle olive oil and balsamic vinegar over the salad, and season with salt and pepper.
- Serve promptly, as the salad is best fresh.
