Ingredients

Cinnamon Roll Dough

  • 2 tablespoons ground flaxseed
  • 6 tablespoons water

  • 1 cup warm non-dairy milk
  • 1 cup warm water
  • 3 tablespoons granulated sugar
  • 2 tablespoons light brown sugar

  • 4 cups all-purpose flour
  • 2 cups whole wheat flour
  • 1 tablespoon cinnamon
  • 1 teaspoon salt

Cinnamon Roll Filling

  • cup canola oil
  • ¼ cup light brown sugar
  • 2 tablespoons granulated sugar
  • 1 tablespoon cinnamon
  • ½ teaspoon nutmeg

Frosting

  • 2 cups powdered sugar
  • 2 tablespoons vegan butter
  • 2 tablespoons non-dairy milk
  • ½ teaspoon almond extract

Instructions

  1. Make flax eggs by combining ground flaxseed and water, and let sit for at least 5 minutes.
  2. Dissolve yeast and sugar in warm water and non-dairy milk, then let sit until bubbly.
  3. Mix in salt, oil, flax eggs, and cinnamon.
  4. Gradually add flour, mixing until the dough comes together.
  5. Knead the dough on a floured surface until smooth and elastic.
  6. Place the dough in an oiled bowl, cover, and let rise until doubled in size, about 45 minutes.
  7. Prepare the filling ingredients in a small bowl.
  8. Roll out the dough into a rectangle and spread the filling evenly.
  9. Roll the dough tightly and cut into 12 pieces, placing them in a greased baking dish.
  10. Cover and let rise for another 15-20 minutes.
  11. Bake in a preheated oven until golden brown, about 30 minutes.
  12. Prepare the frosting by mixing vegan butter, non-dairy milk, and powdered sugar, then frost cooled rolls.
