Instructions
- Make flax eggs by combining ground flaxseed and water, and let sit for at least 5 minutes.
- Dissolve yeast and sugar in warm water and non-dairy milk, then let sit until bubbly.
- Mix in salt, oil, flax eggs, and cinnamon.
- Gradually add flour, mixing until the dough comes together.
- Knead the dough on a floured surface until smooth and elastic.
- Place the dough in an oiled bowl, cover, and let rise until doubled in size, about 45 minutes.
- Prepare the filling ingredients in a small bowl.
- Roll out the dough into a rectangle and spread the filling evenly.
- Roll the dough tightly and cut into 12 pieces, placing them in a greased baking dish.
- Cover and let rise for another 15-20 minutes.
- Bake in a preheated oven until golden brown, about 30 minutes.
- Prepare the frosting by mixing vegan butter, non-dairy milk, and powdered sugar, then frost cooled rolls.
